Savory Delight: Niamh's Irresistible Teriyaki Tofu Recipe for a Flavorful Vegan Meal



Serves 2

Ingredients:
- 1 block of tofu, cut into 1cm x 1cm cubes
- Enough cornstarch to coat the tofu
- Chilli oil (or any preferred oil) for frying

For the sauce:
- 100ml soy sauce
- 1 tsp garlic paste (or 2 garlic cloves, minced)
- 70g brown sugar
- 1 tsp ground ginger
- 1.5 tbsp white wine vinegar
- 1 tsp cornstarch
- 100ml warm water
- Sesame seeds for topping



Instructions:
1. Begin by coating the tofu cubes lightly with cornstarch.
2. Heat the chilli oil in a pan, then add the coated tofu cubes.
3. Fry the tofu at medium heat, turning occasionally, until they are lightly golden brown and crispy on the outside (about 10 minutes).
4. While the tofu is frying, prepare the sauce. Combine soy sauce, garlic paste, brown sugar, ground ginger, white wine vinegar, cornstarch, and warm water in a bowl. Mix well.
5. Adjust the sauce consistency by adding more water to thin it out or more cornstarch to thicken it.
6. Once the tofu is golden brown, reduce the heat and pour in the sauce. Stir gently to coat the tofu thoroughly.
7. Allow the sauce to thicken as it heats up and coats the tofu completely.
8. Serve the teriyaki tofu with rice or your preferred grain, along with a selection of your favorite vegetables.
9. Sprinkle sesame seeds on top for added flavor and presentation.
