Decadent Delight: Lauryn's Vegan Chocolate Chip Challah, A Heavenly Treat for Any Occasion
Ingredients:
For the Challah:
- 5 cups bread flour, plus extra for kneading
- 1 & 1/4 cups warm water
- 1/4 cup sugar
- 1/3 cup neutral oil (such as vegetable or canola)
- 1 packet or 1 tbsp active dry yeast
- 1 tbsp salt
- Optional: 1/3 cup vegan chocolate chips
For the Cinnamon Sugar Topping:
- 1 tbsp sugar
- 1 tsp cinnamon
For the Glaze:
- 1 tbsp soy milk
- 1 tbsp agave nectar or maple syrup
Method:

In a large bowl (or stand mixer bowl), combine warm water, active dry yeast, and granulated sugar. Whisk and set aside for a few minutes.

Add the oil to the yeast mixture and whisk again. Then add bread flour, salt, and optional vegan chocolate chips. Knead the dough by hand or using a stand mixer until it comes together, even if it looks slightly lumpy.

Cover the dough with a towel and let it rest for about 10 minutes.

Lightly flour your work surface and knead the dough for about 10 more minutes until smooth. Add more flour if the dough is sticky.

Place the dough in an oiled bowl, cover with a dish towel, and let it rise for about 2 hours. You can punch down the dough in the middle after about an hour of rising.

Preheat the oven to 375°F (190°C). Line a baking tray with parchment paper or a silicone mat.

Remove the risen dough from the bowl and place it on the floured work surface. Shape the dough into a braided challah. You can find videos online for braiding techniques, or simply improvise.

Transfer the braided challah to the prepared baking tray. Cover it with a dish towel and let it rise for another 30-60 minutes until it expands.

Prepare the glaze by mixing soy milk and agave nectar (or maple syrup) in a small dish. In another small dish, mix sugar and cinnamon for the optional topping.

After the final rise, brush the challah with half of the glaze and bake for 30-35 minutes until golden brown.

Remove the challah from the oven, brush it with the remaining glaze, sprinkle with the cinnamon sugar mixture if desired, and let it cool before serving.
